Yukiko Uno, a chef and patissier born in Kyoto, began her career as a chef before founding the patisserie "Mushiyashinai" in Sakyo Ward, Kyoto, where she started developing sweets in earnest. Inspired by meeting customers with allergies, she devised the "Miracle Cake," which is 100% plant-based and does not use wheat, dairy products, or eggs. Initially unaware of concepts like veganism and gluten-free diets, interactions with vegan travelers from the UK led her to realize the importance of "food barrier-free" catering to diverse dietary needs, such as food allergies and religious restrictions.Currently, she has expanded her activities beyond sweets to a wide range of dishes like ramen, proposing a food culture that everyone can safely and deliciously enjoy while respecting Kyoto's traditions and ingredients. Leveraging her position as a non-vegan, she continues to explore plant-based ideas while tasting gourmet food around the world. From her hometown Kyoto to the world, she is energetically working to remove "food barriers."
We aim not only for plant-based offerings but to provide "emotionally impactful dining experiences" that move hearts the moment you eat. Respecting the essence of Kyoto while blending health consciousness and traditional flavors, we aspire to reconstruct a new food culture. Additionally, through study sessions, seminars, and media appearances on allergies and veganism, we actively work to create a society where barrier-free menus can be chosen naturally. Our wish is to expand a world where people can share "deliciousness" in enjoying meals, regardless of any dietary restrictions or personal values.
